Summer Salad Suppers

I used to not believe eating salad for dinner or even lunch for that matter would be filling.  I was wrong, my view of salad was all wrong.  I only saw lettuce and and tomato as a side dish.   My mind and taste buds open up over the years from reading cookbooks, taking cooking classes and just experimenting.  I also started shopping at farmers markets, gourmet specialty stores and food markets in other ethnic neighborhoods which open me up to a wider variety of produce.
